Here we go… Blue Cheese Burgers (sometimes called Burgers de Fromage Bleu in our house) totally rock. They are amazing – because the juxtaposition between the juicy burger mince and the tangy, rich blue cheese is simply divine.
They’re a bit fiddly to make, because of all the shaping and squeezing, but once you have made one then it’s a case of rinse and repeat.
The great thing is you can vary the amount of blue cheese according to your own tastes, and even for individual burgers.
I like mine on the rare side. If your mince is fresh, then this isn’t a problem. I like to put my burgers in brioche buns.
